Grilling stuffed peppers

Stuffed peppers has always been one of my favorite comfort foods – and while I’ve cooked it many times, I’d never grilled them. On a side note though, I relearned an old lesson that it’s best to check the pantry before starting to cook … I was out of stewed tomatoes and tomato soup. Fortunately I managed to improvise and it actually turned out better than I expected … I cut up a handful of cherry tomatoes and added ketchup until the filling as the right consistency. Not really a recipe, more of a throw what you have together into a meal …. I also added a few pinches of my favorite BBQ rub to bring out some personality in this dish.

I fried up some ground beef with Spanish onions …

After cooking the ground beef, I pulled the pan off to the side of the cooktop and tilted it using a large spoon to drain any grease.

I cut the side off and took out the pith and dropped in a few spoonfuls of the stuffing

Cooked over indirect heat … perfect with a slice of melted cheese.
